
What Is Robusta Coffee?

The Quick Answer
Robusta has the worst reputation in coffee. Say the word to a specialty professional and they will likely wince. The association is immediate: bitter, harsh, rubbery, cheap. In many cases, that reaction is justified. The vast majority of Robusta is produced and traded as a low-cost commodity, and it tastes like it.
However, dismissing Robusta entirely means ignoring three things. First, Arabica is literally Robusta’s child. Second, Robusta’s disease-resistance genes have been bred into some of the most important modern Arabica varieties, including Castillo. Third, a small but growing number of producers are demonstrating that Robusta, grown with care, can produce cups that challenge assumptions about what the species can do.

Robusta Is a Species, Not a Variety
The first thing to understand about Robusta is that it is a species, not a variety. Its botanical name is Coffea canephora. “Robusta” is actually the name of one of its morphological groups (the other is called Nganda), but the coffee industry uses “Robusta” as shorthand for the entire species. Moreover, the genus Coffea contains 120 to 130 species, of which only Arabica and Canephora (Robusta) have significant commercial importance.
Within Robusta, there are varieties, cultivars, and clonal selections, just as there are within Arabica. However, the Robusta market rarely identifies them. A bag of Arabica might specify Caturra, Pink Bourbon, or Gesha with farm-level traceability. A bag of Robusta almost always just says “Robusta.” This reflects how the market values the two species: Arabica rewards traceability and distinction, Robusta rewards volume and price.
What Does Robusta Taste Like?
Commodity Robusta, which represents the vast majority of production, tastes harsh. Common characteristics include:
- Bitterness. Robusta’s higher caffeine content (roughly 2.2 percent versus Arabica’s 1.2 percent) contributes significant bitterness. Caffeine is inherently bitter, and the doubled concentration is immediately noticeable.
- Earthy and woody notes. Where Arabica produces fruit, florals, and chocolate, commodity Robusta tends toward earth, wood, and grain.
- Rubbery or burnt rubber notes. The most commonly cited negative characteristic. These notes come from specific chemical compounds that develop during Robusta’s growth and processing.
- Low acidity. Robusta produces very little of the organic acid brightness that gives Arabica its sparkle and liveliness. The cup tends to taste flat and monotone.
- Heavy body. Robusta produces a thick, heavy mouthfeel. Moreover, this body is one of the few qualities that the specialty world values, which is why Italian-style espresso blends often include a proportion of Robusta for crema and weight.
However, this profile describes commodity Robusta that has been strip-picked, mass-processed, and traded on price. Specialty-grade Robusta (sometimes called Fine Robusta) can taste significantly different:
- Chocolate and dark cocoa. Well-grown Robusta can produce genuine chocolate sweetness without the harsh bitterness.
- Nuts. Hazelnut, almond, and peanut notes appear in carefully processed Robusta.
- Dark fruit. Dried fruit, raisin, and dark berry notes can emerge from quality Robusta, especially from Ugandan and Indian lots.
- Smooth body without harshness. When the rubbery and burnt notes are absent, Robusta’s natural body becomes an asset rather than a liability.
The gap between commodity and specialty Robusta is enormous, arguably larger than the gap between commodity and specialty Arabica. This matters because it suggests that much of what makes Robusta taste “bad” comes from how it is treated rather than from the species itself.
Why Robusta Tastes Different from Arabica
The flavour difference between Arabica and Robusta is not arbitrary. It stems from real chemical and genetic differences between the two species:
- Caffeine. Robusta contains roughly twice the caffeine of Arabica. Caffeine is bitter, so more caffeine means more bitterness. Moreover, caffeine acts as a natural insecticide, which is one reason Robusta resists pests better than Arabica.
- Chlorogenic acids. Robusta contains higher concentrations of chlorogenic acids, which contribute to astringency and bitterness. Furthermore, during roasting, these acids break down into compounds that taste harsh.
- Sugars. Arabica contains significantly more sucrose than Robusta. Sugars contribute to sweetness, caramelisation during roasting, and the development of fruity and chocolate flavours. Moreover, Arabica’s Eugenioides parent likely contributed this higher sugar content, as Eugenioides is known for extraordinary sweetness.
- Aromatic compounds. Arabica produces a wider range and higher concentration of volatile aromatic compounds. These are the molecules responsible for the fruit, floral, and complex notes that define specialty coffee. Robusta produces fewer of them, which is why the cup tends to taste simpler and less layered.
- Lipids. Arabica contains more lipids (oils) than Robusta, which contribute to mouthfeel and the transport of aromatic compounds. Moreover, these oils are partly responsible for Arabica’s smoother, more rounded texture in the cup.
These differences are genetic, meaning no amount of careful farming or processing will make Robusta taste exactly like Arabica. However, good farming and processing can minimise Robusta’s worst characteristics and bring out its best. The challenge is that the market rarely incentivises this level of care.
Arabica Is Robusta’s Child
The most important fact about Robusta is one that the specialty world rarely discusses. Arabica, the species that defines quality coffee, originated as a natural hybrid of Coffea canephora (Robusta) and Coffea eugenioides. This hybridisation happened tens of thousands of years ago in the Ethiopian highlands, and the offspring doubled its chromosomes to become a new tetraploid species: Coffea arabica.
This means every cup of Arabica carries Robusta genetics. Every Gesha, every SL28, every Pink Bourbon, every competition-winning lot that sells for hundreds of pounds per kilogram contains DNA from the species that specialty coffee dismisses. Moreover, some of Arabica’s most valued traits, including its vigour, its adaptability, and its capacity to grow in diverse environments, likely came from the Robusta side of its ancestry.
The Eugenioides parent contributed sweetness, low caffeine, low bitterness, and delicacy. The Canephora parent contributed vigour, adaptability, and structure. Arabica is the combination of both. The Timor Hybrid Bridge
Robusta’s most direct contribution to modern specialty coffee came through the Timor Hybrid, a natural cross between Arabica and Robusta that occurred on the island of Timor in Southeast Asia. This spontaneous interspecies hybridisation is one of the rarest events in coffee genetics.
The Timor Hybrid inherited Robusta’s resistance to coffee leaf rust while maintaining much of Arabica’s chromosome structure and cup quality. Moreover, breeders recognised immediately that the Timor Hybrid was a bridge: it could transfer Robusta’s disease resistance into Arabica varieties through controlled crossing.
The result was a new generation of disease-resistant Arabica varieties:
- Castillo. Developed by Colombia’s Cenicafé by crossing Caturra with Timor Hybrid, then backcrossing with Caturra across multiple generations. Initially controversial for cup quality, Castillo now produces exceptional coffees through innovative processing. - Catimor. A cross between Caturra and Timor Hybrid developed by multiple breeding programmes worldwide. Catimor provides strong rust resistance but has often drawn criticism for cup quality.
- Sarchimor. A cross between Villa Sarchi (a Bourbon mutation from Costa Rica) and Timor Hybrid. Sarchimor offers disease resistance with better cup quality than many Catimor selections.
- Colombia (variety). Another Caturra x Timor Hybrid cross, widely planted across Colombia alongside Castillo.
Each of these varieties carries a small proportion of Robusta genetics. The backcrossing programmes diluted the Robusta contribution as much as possible while retaining the rust-resistance genes. Moreover, the debate over whether these varieties can match the cup quality of pure Arabica varieties like Caturra and Bourbon has shaped specialty coffee politics for over a decade.

Where Robusta Grows
Robusta originated in the forests of Central and West Africa and now grows across the tropical lowlands of three continents:
- Vietnam. The world’s largest Robusta producer and the second-largest coffee producer overall. Vietnamese Robusta dominates the instant coffee and commercial blend markets. Moreover, Vietnam’s coffee industry expanded rapidly from the 1990s onwards, transforming the country into a global coffee power in a single generation.
- Brazil. The world’s largest overall coffee producer grows both Arabica and Robusta (called Conilon in Brazil). The state of Espírito Santo is the centre of Brazilian Robusta production. Furthermore, Brazilian Conilon has its own research programme with named clonal selections, making it more traceable than Robusta from most other origins.
- Indonesia. Sumatra, Java, and Sulawesi all produce Robusta alongside their Arabica. Indonesian Robusta is widely used in commercial blends and instant coffee.
- India. Indian Robusta grows primarily in Karnataka and Kerala. Moreover, Indian specialty Robusta (particularly from estates like Sethuraman in the Araku Valley) has begun to earn recognition in the Fine Robusta movement.
- Uganda. Uganda is Africa’s largest coffee exporter and produces primarily Robusta. Ugandan specialty Robusta has earned attention for its chocolate, dark fruit, and smooth body. Furthermore, Uganda’s geographic position (near Robusta’s evolutionary origin in Central Africa) means Ugandan Robusta populations carry significant genetic diversity.
- West and Central Africa. Ivory Coast, Cameroon, Democratic Republic of Congo, and other countries produce significant Robusta volumes. Moreover, the DRC is particularly interesting because Robusta originated in the Congo Basin, meaning the wild Robusta populations there represent the species’ deepest genetic diversity.
The Stigma and the Reality
Robusta’s reputation in specialty coffee is almost universally negative. Some of this is earned, and some is not:
What the stigma gets right:
- The vast majority of commercially produced Robusta tastes bad. Strip-picking, careless processing, and commodity-oriented farming produce exactly the harsh, bitter, rubbery coffee that the stigma describes.
- Robusta does contain more caffeine, more chlorogenic acids, and fewer sugars than Arabica. These are genetic facts, not farming failures. They mean Robusta will always taste fundamentally different from Arabica, even at its best.
- The market structure incentivises poor quality. Nobody pays Robusta farmers a premium for selective harvesting or careful processing, so most farmers have no economic reason to invest in quality.
What the stigma gets wrong:
- It conflates “how Robusta is treated” with “what Robusta is.” Much of what makes commodity Robusta taste terrible comes from careless farming and processing, not from the species itself. When producers invest the same care in Robusta that specialty Arabica receives, the cup quality improves dramatically.
- It ignores Robusta’s genetic contribution to Arabica. Every Arabica variety carries Robusta DNA. The species that specialty coffee celebrates could not exist without the species it dismisses.
- It treats Robusta as monolithic. Like Arabica, Robusta contains genetic diversity. Different Robusta populations in Uganda, India, DRC, and Indonesia produce different cup profiles. The assumption that “all Robusta tastes the same” is as wrong as assuming all Arabica tastes the same.
The Fine Robusta Movement
A small but growing number of producers, cuppers, and buyers are challenging the stigma through what has become known as the Fine Robusta movement. The approach is straightforward: apply specialty coffee’s quality principles (selective harvesting, careful processing, rigorous cupping, traceability) to Robusta and evaluate the results honestly.
The Coffee Quality Institute (CQI) developed a Fine Robusta cupping protocol and Q Robusta grading system, creating a formal quality framework for the species. Moreover, producers in Uganda, India, and Indonesia have used this framework to demonstrate that Robusta, grown and processed with care, can score surprisingly well on cupping.
Fine Robusta will never taste like specialty Arabica. The species has different genetics and different chemistry. However, it can taste clean, sweet, chocolatey, and smooth, which is a world away from the harsh, rubbery commodity product that defines most people’s experience of Robusta. Furthermore, the Fine Robusta movement matters for economic justice: Robusta-growing regions are often among the poorest coffee-producing areas. Creating a quality tier with premium pricing gives producers an incentive to invest in quality rather than racing to the bottom on volume and price.
Robusta in Espresso
Despite its stigma in specialty circles, Robusta plays an important role in one of the world’s most popular coffee traditions: Italian espresso. Traditional Italian espresso blends often include 20 to 40 percent Robusta alongside Arabica. The Robusta contributes:
- Crema. Robusta produces thicker, more persistent crema than Arabica. Moreover, the crema is darker in colour and more visually dramatic, which Italian coffee culture prizes.
- Body. Robusta’s heavy mouthfeel adds weight and substance to the espresso shot.
- Strength. The higher caffeine provides a stronger, more intense experience. Furthermore, in Italian coffee culture, strength and body are valued alongside (or even above) the complexity and nuance that specialty coffee prioritises.
- Lower cost. Robusta is significantly cheaper than Arabica, which allows Italian roasters to offer consistent, affordable espresso at scale.
Specialty espresso, including everything at Routes, typically uses 100 percent Arabica because it prioritises complexity, sweetness, and origin character over body and crema. However, the Italian tradition demonstrates that Robusta has a legitimate place in coffee culture even if that place is different from what specialty values. Robusta and Climate Change
Climate change adds urgency to the Robusta conversation. As global temperatures rise, the altitude zones where Arabica thrives are shrinking. Research suggests that suitable Arabica growing area could decline by up to 50 percent by 2050. Moreover, coffee leaf rust, which thrives in warmer, wetter conditions, is spreading to regions that were previously unaffected.
Robusta, with its tolerance for higher temperatures and natural disease resistance, may become more important in the future. Furthermore, the genetic traits that make Robusta resilient (heat tolerance, pest resistance, drought tolerance at low altitudes) are exactly what breeders need to build climate-adapted Arabica varieties. The Timor Hybrid already demonstrated that Robusta’s resistance genes can transfer into Arabica. Future breeding programmes will almost certainly draw on Robusta genetics even more heavily.
This means that even roasters who use exclusively Arabica (like Routes) have a stake in the health and genetic diversity of the Robusta species. Preserving Robusta’s genetic diversity, particularly in its Central African centre of origin, is essential for the long-term resilience of all coffee. First, it is Arabica’s parent. Every cup of Arabica carries Robusta genetics. The specialty world’s most celebrated coffees owe their existence to the species it dismisses.
Second, Robusta’s disease-resistance genes have saved Arabica from devastation. Through the Timor Hybrid, Robusta’s rust resistance now protects millions of hectares of Castillo, Catimor, and Sarchimor plantings worldwide.
Third, Robusta feeds the world. While specialty coffee focuses on the top tier, Robusta provides affordable coffee to billions of people through instant coffee, commercial blends, and Italian espresso. Dismissing Robusta means dismissing the coffee that most of the world actually drinks.
Fourth, Robusta’s climate resilience may prove critical as warming temperatures squeeze Arabica’s viable growing zones. The genetic traits that specialty coffee dismisses today may be the traits that save the crop tomorrow.
