What Shapes Acidity in the Cup?
Several factors determine how much acidity you taste and what kind it is. Understanding these variables helps you make more informed choices when selecting coffee, and furthermore helps you troubleshoot your brewing when something tastes off.
Origin and Altitude
Where a coffee is grown has a profound influence on its acidity. African coffees, particularly those from Ethiopia and Kenya, are known for vibrant, fruit-forward brightness. Ethiopian coffees often exhibit citrus and floral notes, while Kenyan coffees frequently show a bold, almost wine-like acidity. In contrast, South American coffees such as those from Brazil tend toward lower acidity with nutty and chocolate undertones, and Central American coffees often offer a clean, citrus-like brightness that sits between the two.
Altitude plays an equally important role. At higher elevations, cooler temperatures slow the development of the coffee cherry. As a result, the bean has more time to accumulate complex sugars and organic acids before harvest. Coffees grown above 1,800 metres, for example, typically have a more pronounced and nuanced acidity than those grown at lower altitudes.
Processing Method
The way a coffee is processed after harvest significantly influences its acidity in the cup. Washed processing removes the fruit from the bean before drying, which tends to produce a cleaner, brighter acidity, one where origin character comes through clearly. Natural processing dries the bean with the fruit intact, and as a result the cup often tastes sweeter and fruitier, with lower perceived acidity. Honey processing sits in between, producing a balanced cup with moderate acidity and a hint of fruit-like sweetness.
In other words: if you enjoy vivid, crisp acidity, washed coffees are your best starting point. If you prefer a rounder, sweeter cup, natural or honey-processed beans are worth exploring.
Roast Level
Roasting is where acidity is most dramatically shaped. Light roasts preserve the bean’s natural organic acids, producing bright, lively cups that reflect the character of the origin. As roasting progresses, heat breaks down these acids and as a result, medium roasts soften the brightness and bring caramelised sweetness to the foreground. Dark roasts diminish acidity significantly, producing fuller-bodied, lower-acid cups with bolder flavours.
This is why the same bean, roasted differently, can taste like an entirely different coffee. Furthermore, it is why specialty roasters tend to use lighter roast profiles for high-quality, high-altitude beans, to preserve and showcase the complexity that the terroir has created.
Brewing Method
Brewing method also plays a role in how acidity is expressed. Pour-over methods — such as V60 or Chemex — produce a clean, transparent extraction that highlights acidity. Espresso concentrates the flavours but the shorter extraction time can round out the brightest notes. French press, because of its immersion style and metal filter, produces a fuller-bodied cup with lower perceived acidity. Cold brew, due to its low-temperature extraction over many hours, produces the smoothest and least acidic result of all common methods.

As a quick reference, here is how acidity tends to express itself across the major growing regions:
- Ethiopia: Bright citrus and floral acidity. Often described as tea-like, with bergamot and jasmine notes.
- Kenya: Bold, wine-like acidity with blackcurrant and tomato-like brightness. High citric and phosphoric acid content.
- Colombia: Balanced, moderate acidity with red fruit and caramel notes. A good starting point for those new to specialty coffee.
- Brazil: Low acidity with nutty, chocolatey character. Full-bodied and smooth.
- Guatemala and Costa Rica: Clean, bright acidity with stone fruit and citrus notes. Often well-structured and easy to appreciate.
- Sumatra and Indonesia: Low acidity, earthy and herbal character with significant body.
How to Taste Acidity Like a Pro
Developing the ability to recognise and name acidity takes practice, but it is an achievable skill for any coffee drinker willing to pay attention. Here are the most effective techniques used by professional tasters.
Focus on Where You Feel It
Acidity in coffee is most clearly perceived on the sides of the tongue and the front of the mouth. It registers as a bright, crisp, or sometimes tingly sensation, similar to biting into a green apple or a slice of lemon. This is different from bitterness, which tends to register at the back of the tongue, and from sweetness, which is felt at the tip.
Let the Coffee Cool
Never evaluate a coffee immediately after pouring. Taste receptors perceive the most detail at around 50–60°C. As a result, allowing the coffee to cool slightly before tasting reveals more of its complexity. Furthermore, as the coffee continues to cool, the flavour profile often shifts and acidity, in particular, can become more clearly defined at lower temperatures. This is one reason why professional cuppers always taste coffee across a range of temperatures.
Taste Black, Without Additives
Milk and sugar both mask acidity. Milk proteins bind to acidic compounds, softening the brightness significantly. Sugar, on the other hand, can suppress the perception of sharpness. When tasting for acidity specifically, drink the coffee black so that nothing interferes with what the bean has to say.
Compare Side by Side
One of the fastest ways to calibrate your palate is to taste two coffees at the same time. Try placing a washed Ethiopian alongside a Brazilian natural, for example. The contrast makes the acidity in the Ethiopian much easier to identify because it becomes relative rather than abstract. In addition, you can try the same coffee brewed with two different methods, a V60 and a French press, to experience how dramatically extraction style changes the perception of brightness.
