At Finca Milán in Pereira, Risaralda, Julio Andrés Quiceno approaches coffee processing as both a science and an art form. As the lead behind the farm’s experimental program, Julio’s work with the Caturra variety at 1500 MASL has produced some of Colombia’s most expressive and fruit-forward lots.
This coffee features Julio’s Coconut Fermentation, part of his innovative Culturing Process. It is a precise yet intuitive approach that treats fermentation as something alive and constantly changing. By closely managing variables such as humidity (10–11.5%), Julio guides the coffee’s development with impressive control and brings out flavours of chocolate, butter and coconut.
