After harvesting mature cherries, the selection process begins by removing floaters, ensuring only the healthiest cherries are used. These cherries then undergo a 24-hour oxidation process, which pre-ferments the lychee fruits and the yeasts inoculated into the coffee. This pre-fermentation step enhances the aromatic precursors, setting the stage for a rich and complex flavour profile. The fermentation process converts alcohol into a medium that transports aromatic compounds, adding a unique flavour layer.
