El Paraíso is a pioneering family-run project led by Diego Samuel Bermúdez in Piendamó, Cauca. Since 2008, Diego has developed a reputation for pushing the boundaries of coffee processing through innovation, meticulous control, and a deep understanding of fermentation. His work with microorganisms, yeasts, and temperature-controlled environments has made El Paraíso one of Colombia’s most influential specialty farms.
This Gesha lot showcases Diego’s signature washed thermal shock process. Ripe cherries are harvested at peak sweetness, depulped, and fermented using tropical yeast to boost fruity complexity. After fermentation, the coffee is washed using thermal shock to stabilise and lock in its aromatics. Finally, it’s carefully dried in a dehumidifier to protect delicate flavours and ensure a clean, refined cup.
