Anaerobic Washed – Cherries are hand-picked at peak ripeness and hermetically sealed in plastic barrels for 72 hours of anaerobic fermentation.  The cherries are then depulped and put into tanks for 4 hours of dry fermentation.  Parchment is then rinsed 4 times to remove mucilage before being dried in a parabolic sun dryer for approx. 18 days, during which time it’s hand turned and sorted to remove defects.
